Glass-ceramic plates

Vitros are the most common kitchen plates in homes. The glass ceramic is a material that is obtained from a mixture of iron ore and other components with properties similar to those of glass, resistant to very high temperatures. There are vitroceramic plates to gas, electric, induction, halogen, radiant, fast (Hi-Light or High-Light), and even models that combine bulbs of different types and in different numbers.

The glass-ceramic plates work by means of an electrical resistance that heats the chosen focus and this one distributes the heat instantaneously by the delimited surface of the focus, without extending it in horizontal by the rest of the plate.

Advantages of glass-ceramic

The vitrocerámicas are safe to have a thermostat and pilots warning residual heat that can be used and thus save energy by turning off the focus a few minutes before finishing cooking. Other advantages are that they allow to heat containers of all type of material and that are very easy to clean, it is enough a soft cloth in cold and a scraper with blade to scratch the remains of food. In addition, they resist weights, blows and large differences in temperature.

Disadvantages of glass-ceramic

These plates have good performance, although they are more expensive than traditional gas and electric cookers, but less than induction cookers. Your energy consumption is higher.

Types of glass-ceramic plates
• Gas vitroceramic : They work with butane gas. They are more expensive than electric stoves (between 150 and 250 euros) but consume less energy. Its offer is limited, due to its high price and low energy efficiency. Look for one with electric ignition to not depend on the matches.
Easy cleaning

• Induction hobs : They work by magnetic waves, not with resistances, and therefore they do not burn if the ignition is touched, which makes them recommendable if there are children at home. The heat is generated instantly, which consumes less energy when cooking. In fact, they are the plates of greater energy efficiency and of price oscillate between 250 and 500 euros.

With the heating system by induction, the heat energy is transmitted directly to the pan or pan without causing any loss of energy in the environment of your kitchen.

• Halogen glass-ceramic : They generate heat by means of halogen spotlights. They consume a lot of energy because they require a lot of power. In Spain only plates that combine a halogen fire with others of another type are sold.

• Radiant Vitroceramic: They generate heat by means of radiant resistances, manufactured from metallic alloys of helical or spiral form that are fixed in a support of insulating material. They are the cheapest but they are barely sold because they have become obsolete.

• Fast plates or Hi-light : They work by means of wave resistances that warm up quickly. They replaced the radiant ones and today they are the most common in the houses, although closely followed by the glass-ceramic induction plates.

Induction plates (not glass-ceramic)

Induction plates are becoming increasingly important in homes due to their multiple advantages. Like the vitroceramics (induction), they are equipped with a ceramic glass surface that is very resistant to weight, shock and high temperatures. But they heat twice as fast as these because the heat is generated directly at the base of the vessels by magnetic waves, without heating the bulb or the plate (which does not burn if touched).

By recognizing the size of the container, they supply the precise energy and thus reduce the cooking time and the power consumption. To accelerate cooking even more, the power of two can be concentrated in a single focus.

They are also safer to have sensors that disconnect the board in certain cases (overheating, overflow, time without manipulation, etc.).

Disadvantages: the high price of the initial investment (they cost twice as much as the glass-ceramics) and that require a specific battery: ferromagnetic containers (with a layer of magnet in the base) made of enameled steel, cast iron or special stainless steel for induction and the base should be flat and thick.
